I love making this high protein granola for a quick weekday breakfast I can grab while I’m running out the door! Pairs well with yogurt and fruit. This recipe has very low sugar in it, so I like to add a sprinkle of monk fruit on top for added sweetness, without any of the penalties of sugar.
Ingredients:
3 cups oats
1 cup chopped pecans
1/2 cup sunflower seeds
1/2 cup chia seeds
1/2 cup pumpkin seeds
1/4 hemp seeds
1/2 cup of coconut sugar
3/4 cup coconut oil (melted)
4 tbsp vanilla extract
a generous shake of cinnamon & nutmeg
Directions:
Combine all ingredients into a large bowl and mix until the coconut oil is well distributed.
Bake in oven on low heat (300 degrees) for approximately 20 minutes, stirring it at the half way point, to make sure all sides of the granola are nice and crunchy.
