I make these PB and honey, oat power balls almost every week now since creating this recipe! The texture reminds me of cookie dough and they are a great satiating snack for any time of the day. Feel free to adjust the recipe to your liking; sometimes I use less honey and sometimes I throw in some chia seeds for fun.
Ingredients:
2 cups oats (I used organic, gluten free, quick oats)
1 cup natural peanut butter
3/4 cup liquid honey
1/2 cup chocolate chips (I use the “enjoy life” brand)
Directions:
Combine all ingredients into a large bowl and mix with beaters. (Tip: warming up the peanut butter in the microwave for 30 seconds makes it softer and easier to mix together).
Once ingredients are well mixed, role into bite sized balls and enjoy!
Can be stored in Tupperware in the fridge for up to 10 days.
